Welcome to Eat Well Utah // 2 Ingredient Pizza Dough

Hello!  My name is Candi Merritt.  I am the author and administrator for Eat Well Utah.  I have worked for the Food $ense Program since 2008 as a Certified Nutrition Education Assistant, trained through the National Nutrition Paraprofessional Certification Program.  The Food $ense program (also known as SNAP-ED) provides nutrition education to residents of Utah.  Specifically the program targets SNAP recipients and food stamp eligible individuals.  The Food $ense program teaches a variety of classes to expand participants’ knowledge not only in the area of nutrition, but also budgeting, cooking, food safety, and physical activity.  To find out about classes in your county, click here.

Eat Well Utah aims to focus on teaching participants how to cook healthy meals on a budget, buy and prepare whole foods, read food labels, practice safety in the kitchen, and much more!  My favorite lesson to teach is called “Be Wise About Portion Size”.  It focuses on how to keep our portion sized under control for weight management and overall health benefits.  Check back often for great nutrition tips and tasty recipes to try at home!

Pizza with Red Peppers

One of my favorite recipes is Three Ingredient Pizza Dough.


1 cup self-rising flour

1 cup greek yogurt

1 T Italian seasoning

In a bowl, combine the three ingredients and bring together to form a ball.  Spray your pizza pan with non-stick spray.  Lightly flour your hands and roll your dough into a ball and place it in the center of your pizza pan.  Work the dough out to the edges from the center by pressing down with your palms until the dough has reached all edges of the pan.  Top with the pizza toppings of your choice and bake on 350 degrees for 20-30 minutes.  Enjoy!
