Who likes to eat quesadillas? Don’t we all? The best thing is that they don’t have to be just a tortilla and cheese! Have you ever considered ways to spice up quesadillas? You can add many different things to make them more filling and even a complete meal (with all the food groups from MyPlate). In this post, I’ll show you one of our favorite quesadilla recipes: Veggie Quesadillas. Hopefully it will give you some ideas of how to make your cooking a little more nutritious and flavorful!
First: Gather all your ingredients. You’ll need:
1/2 C cooked pinto beans
2 medium tomatoes, chopped
1 C bell pepper, chopped
2 green onions, chopped
2 carrots, grated
1/4 C Monterey Jack cheese, grated
1/4 C plain yogurt
2 T salsa
The next instructions are pretty straightforward. Most people know how to make quesadillas so don’t be to intimidated by all the “instruction” business below. Just make sure to get all the vegetables, cheese and beans inside the tortilla. There’s not many ways to ruin this recipe. It’s so easy kids can help us out too! Try involving your kids when making these yummy quesadillas.
Now, onto the “real” instructions.
Put the beans tomatoes, bell pepper, onions, and carrots in a medium bowl. Warm up the tortilla in a skillet or in a pan on the stove. Place half of your vegetable/bean mixture onto one side of the tortilla and sprinkle with cheese. Fold over and cook for 2-3 minutes, or until the cheese is melted.
I topped mine with plain yogurt, salsa and lettuce.
I know, I know, PLAIN yogurt on a quesadilla? Surprisingly, plain yogurt is a great substitute for sour cream! It’s a lot cheaper and quite lower in fat. Try it sometime, I bet you won’t be able to tell the difference! Ejnoy!
