Freshen Up // Strawberry Avocado Salad and More!

This time of year there are so many delicious foods around. It tends to be a time of year where we let things slide a little, as we enjoy the indulgences of the season. After a few indulgences, I feel the itch to get back to fresh, healthy foods. It doesn’t get more fresh than a bowl full of salad greens. A green salad is light and fresh, but can be hearty enough to fill you up.

According to fruitsandveggiesmorematters.org, consumption of vegetables in the U.S. is less than the amount recommended by MyPlate. MyPlate recommends we get at least 3 cups of vegetables each day, but many people get less than 1 cup. Simply adding a salad to one of your meals each day can greatly increase your overall vegetable consumption.

Strawberry Avocado Salad

Quinoa Spinach Salad

It doesn’t get much more fresh than spinach and lemons. The quinoa added on top adds an extra punch of nutrition, and a great whole grain to help keep your stomach fuller longer.

Italian Salad

Italian Salad is one of my all time favorites. It is packed with healthy protein from ham and turkey, and packs a spicy punch when you toss in pepperoncinis. Dressing made from oil, vinegar, and Italian seasoning tops the salad off with just enough Italian flare.dsc_0755italian-salad
