Fancy Without the Fuss // Spinach Parmesan Zucchini Noodles

Have you eaten your veggies today? MyPlate recommends the average adult get 2 1/2 to 3 cups of vegetables each day. Spinach is great way to boost your veggie consumption. It is an easy addition to many kinds of recipes. With it’s mild flavor, you’ll hardly know it’s there. You can use it as a salad base, chop it up and toss it in pasta sauce, stir fry, or an omelet. Spinach Parmesan Zucchini Noodles is a fun way to get your veggies.

Turning zucchini into “noodles” is easy. This recipe will make your plate look fancy, without the fuss. The recipe instructs you to use a box style grater, laid on it’s side. You can create zucchini noodles by dragging the zucchini along the grater. You can get the same effect by using a vegetable peeler. Instead of peeling just the skin off the zucchini, keep peeling al the way through. Come back and let me know how you used zucchini this week. Enjoy!
